Why the Opinel N°08 mushroom knife
The blade is curved and 8 cm long. It is stainless steel, so it stays sharp and does not rust. Thanks to the curve, you cut the stem cleanly without harming the cap. In addition, the back of the blade has small teeth. So you get extra grip and more control.
